Whole Hog, Down East
A one-day field trip through wood smoke, vinegar pepper, crackling, and the families carrying the tradition forward.
Researched from official and destination sources
The route
One day: start at Grady’s or Skylight Inn, then add B’s or Sam Jones. Do not force all four before sellouts.
Before you go
- Thursday through Saturday offers the best chance of catching every stop, but always confirm first.
- Distances look short on a map; rural roads and a proper meal make the loop a full day.
- Wilson is an easy eastern stop off I-95 before or after this loop: Parker’s and Marty’s both serve chopped pork and fried chicken.
- On Saturdays, Hookerton’s Morris Barbeque is a short detour southwest of Greenville for another whole-hog tray.
- Pitt County also runs its own Brew & ’Cue Trail with a Passpork program.
Eastern North Carolina barbecue starts with the whole animal. Hogs cook slowly over wood coals, then the meat is chopped together and seasoned with a thin vinegar-and-pepper sauce. At its best, every tray carries lean meat, rich bits, smoke, and a little crisp skin.
The roads around Pitt and Wayne counties hold an unusually dense group of important pits. Hours can be short and sellouts are part of the culture, so make this a morning-and-lunch trip rather than a late dinner plan.
